What can I say? I like to eat.  I also like to get what I’m paying for, and, in today’s economy and on a teacher’s salary, choosing to eat out is entertainment as well as nourishment so I expect every person in the restaurant – from the hostesses to the bussers, the waiters to the runners, the bartenders to the chefs –  to do their jobs well.  Obviously I expect this because I’m paying, but I also want this because I want the restaurant I’m visiting to succeed.
